Small Batch Roasting Leads to Perfection

Great Northern Roasting Company utilizes an advanced and highly effective drum roaster to create all of our coffees. Drum roasting involves a rotating metal drum with a heat source applied with a constant current of fresh air. (Functioning much like a clothes dryer). The coffee tumbles inside the drum allowing heat absorption through convection and contact with the drum. This ensures a flawless even roast. When the coffee has reached the proper degree of roast it is released into a cooling tray where it is quenched by forcing cool air through the batch and stirring. The coffee is then bagged within one hour to ensure freshness.

Throughout the process of roasting the following occurs:
· Weight loss (15%-25%) through moisture loss.
· Caffeine content loss of 10%-15% (darker roasts have less caffeine).
· Carbon-Dioxide production through “de-gassing” for up to six months.
Carbon Dioxide de-gassing is heaviest within the first 24 hours after roasting and decreases exponentially every 24 hours afterward.

All Great Northern Roasting Company coffees are bagged and heat-sealed within one hour of cooling.

Oxygen is the enemy of fresh coffee. By capturing this naturally occurring carbon dioxide, the coffee itself creates its own oxygen free environment. Using a one-way valve technology all bags of Great Northern Roasting Company coffee can ensure the highest levels of cup-quality that specialty coffee buyers demand. Great Northern Roasting Company packaged coffees have an unopened shelf life of 90 days.

Care and Storage
Once opened, store all coffee in an airtight and opaque container at room temperature away from light and drastic changes in temperature or humidity.

DO NOT FREEZE OR REFRIGERATE. Coffee, like many food products, does not like temperature change. Freezing causes cellular damage within the coffee and allows for greater chances of odor absorption. Furthermore, constant removal from freezing results in flash heating of the coffee accelerating the staling process through deeper cellular damage. Refrigeration causes constant odor absorption and excessive moisture build-up.

To maintain your coffees greatest flavor profile and cup quality, open and store as much coffee as you will use in a one-week period.
